grindhouse really describes the theatres that they used to show in the low budget films in new york on 42nd street back in the day. so it's not about the genre - it's about the budget. most sex/kung fu/horror/women in prison/blacksploitation films were really low budget that couldn't find a home anywhere else - until home video showed up.
you couldn't show these in a mainstream theatre chain .. they wouldn't make a dime. but in the grindhouse cinemas - they played them all day long
eventually the aesthetic of old low budget films with beat to shit prints became known as grindhouse
some are fun and iconic ... some are god awful and unwatchable.
tarantino really captures the typical grindhouse film in Death Proof .. which is mostly endless dialogue between unseasoned no-name actors .. and just a couple of action scenes .. because that's all their budget could get them.
kind of amazing that any of those films got made at all - let alone screened anywhere
