The Official Favorite Soup Thread

In case some kind of shit goes down, I feel it's important you all know my favorite soup. It's New England Clam Chowder. Minestrone comes close. Who else would like to share their soup preferences? I realize this is an invasive question and some people don't wanna end up on a big soup enthusiast mailing list, but it will foster a sense of community as well as ameliorate trouble should it come up. Remember, New England Clam Chowder.

"Alfred, it's cold!"
"It's Vichyssoise...it's suppose to be cold."

Tomato, intravenously if necessary.

Gumbo. Everything else is a distant third(Unless it's from one particular aunt, whose version taste like grease).

Really Doc! You've dropped .000763 % in my esteem for you. I guess you just wanted to be fashionably official, huh?

Shrimp bisque or the occasional French onion.

I'm actually Leprucky Cougar.

hammerfan 10-16-2008 11:45 AM

Homemade vegetable beef - especially my granny's

Disease 10-16-2008 11:46 AM

It's a really hard question...

I think first would be potato and leek... then Minestrone and then miso.... But then I love pumpkin as well.....

I had some soup today, homemade vegetable and smoked haddock.

Papillon Noir 10-16-2008 11:58 AM

I'm partial to a good cream of mushroom or cheese soup.

Over the weekend, the husband and I made a delicious tomato, dill, leek, and sour cream soup with a topping of white cheddar. Yum :)

Great! Thanks, Noir! I'm always on the lookout for new recipes.

cactus 10-16-2008 12:21 PM

can't beat a good gumbo, in my book...

DraculaInDallas 10-16-2008 12:35 PM

New England Clam Chowder followed closely by a spicy southern gumbo

Psycom5k 10-16-2008 12:35 PM

Chili, though i'm not entirely sure its a soup.... but then it would have to be lobster bisque.

Tomato, Dill, and White Cheddar Soup Recipe

I used all organic ingredients for mine, but I'm sure you could use regular if you wanted. :)

servings: 6

2 TBS olive oil
3 c chopped leeks, white and light green parts only
4 28oz cans diced tomatoes and their juices
4 1/2 c chicken stock (i used the low sodium kind)
6 TBS chopped fresh dill, plus fresh sprigs for garnish
1/4 tsp cayenne pepper (i used 1/8 tsp since I'm not big on the spicy)
1 tsp salt
1/2 c sour cream (i put extra in when I served it since I like it more creamy and less tomatoey)
4 oz white cheddar, preferably a good farmhouse cheddar, chilled (i used extra for this as well and didn't measure)

1. Heat olive oil in a large, heavy pot set over medium heat. When hot, add leeks and cook, stirring, until leeks are just softened, for about 3 minutes. Add tomatoes, stock, chopped dill, cayenne, and salt, and bring to a simmer. Cook slowly, uncovered, until tomatoes are very soft, for about 20 minutes.

2. Puree the soup in batches in a blender and return soup to pot (or use an immersion blender to puree soup in pot). Set pot over low heat; when soup is hot, gradually whisk in the sour cream. Taste soup and season with more salt and cayenne pepper as needed.

3. To serve, ladle soup into soup bowls. Using a vegetable peeler or cheese slicer, shave very thin slices from the piece of cheddar. Arrange 3 to 4 slices on top of each serving. Garnish each serving with a fresh dill sprig.

Noir, can you do me a favor? Can you PM it to me? I have to go out right now and don't have time to print it, and I'm afraid that by the time I get back it'll be too buried for me to find it! :D Thank you!!!!

The Flayed One 10-16-2008 05:58 PM

Am I the only pho fan here? I love the stuff!

Phalanx 10-16-2008 06:00 PM

I can make just about the best mushroom soup...that'd be my favourite.

I quite like "potato and leek" and "pumpkin with nutmeg" soups too.

Definately - gotta go with the nutmeg.

Carrot I haven't tried (on it's own) in soup...mainly just as an addition to others.
I could see it working in certain ways.

neverending 10-16-2008 07:40 PM

I just love soup. One of my favorite foods. Clam chowder, potato, cheese, leek, mushroom, cream of broccoli, tomato... really I'll eat just about anything in a soup type form. I love to put grated parmesan on top of most soups.

pinkfloyd45769 10-16-2008 08:30 PM

My best friend is Mexican,so he has been feeding me all kinds of mex food lately.I tried a soup, don't remember the name,it was sooo good.My mom also makes a homemade tomato soup that is really good. She puts green peppers in it,yummmmmmmmy!:)
