almost any carpenter film with a commentary. his commentaries are as entertaining as the films themselves (and usually very informative)
Same goes for Kevin Smith films
Also Robert Rodriguez films ... great 'film school' extras
and a cooking lesson.. (Once upon a time in mexico)
Kill Bill 2 has footage of rodriguez playing music for the premier of the film .. great extra.
sam raimi and bruce campbell commentaries are also mint ..
most other extras i couldnt give a shit about - most of them - even the 'making of' bits are just footage of the film you recently watched repeated over and over again.
