Jack Nicholson.
About the whole DeNiro/Depp thing, DeNiro went on and got stereotyped in those Taxi Driver and Raging Bull characterisations. The only times he tried something different was in Cape Fear and Mary Shelley's Frankenstein, but by then he was stuck to that "personality" so bad that it didnt do much to give him a make-over. Cape Fear was good, really good. If only he had pursued such roles he would have become a bigger force to reckon with than any other actor out there.
Depp, on the other hand, has done a whole lot of different characterisations on-screen. Just run down the list of Depp movies and you have to admit, the variations of Depp is bound to impress anybody.
Its not about maintaining the mold you are in, but molding yourself to any shape, which makes a truly definitive actor.
